Brussels Sprouts Stir-fry

Ingredients (use vegan versions):

2 teaspoon cooking oil
1 lb. small Brussels sprouts, halved
Sliced Onions to taste
2-3 cloves of garlic, crushed
1 small Bell Pepper, (red or yellow for best color!)
2 tablespoon soy sauce
Large pinch of sugar
Black Pepper to taste
2 tablespoon Toasted Sesame seeds.

Directions:

Heat oil until hot and stir-fry Brussels for 2 minutes Add onions, garlic, and bell pepper. Fry for 2 min. Stir constant. Toss in remaining ingredients. Serve and Enjoy!!

Serves: 6

Preparation time: 20 min.



Garlic Brussels Sprouts


Ingredients (use vegan versions):

1 1/2 pounds or so Brussels sprouts
4 tablespoon olive oil
5-6 whole garlic cloves
1/4 cup sliced almonds, unsalted

Directions:

1. Trim the unsightly outer leaves from the sprouts. Trim off bottom stalk and cut each sprout in half, the large ones into quarters.

2. Steam sprouts for only 2-3 minutes, or until bright green and still firm -they will cook longer in the saute stage.

3. Heat olive oil on low heat or at number 3 and saute the cloves slowly for about 5-7 minutes as you flavor the oil.

4. Toss the well-drained sprouts in with the oil and saute for about 3-4 minutes.

5. Add the almonds and saute 2 minutes more.

6. Serve on a serving platter and admire the bright green color and wonderful garlic aroma

Charred Brussels Sprouts with Oyster Mushrooms

Ingredients (use vegan versions):

brussels sprouts
oyster mushrooms
oil
salt/pepper

Directions:

Clean brussels sprouts (cut off stem and peel off any tough leaves).

Cut mushrooms into one inch pieces.

Toss both together with one or two tablespoons oil, salt/pepper.

Bake in 450 degree oven for 30-30 minutes, until somewhat charred. If sprouts do not come easily off a tip of a sharp knife, cover baking pan with foil and lower temperature to 200 degrees until sprouts are done.

I dont normally like brussels sprouts, but this recipe is delicious and sophisticated.

Serves: variable

Preparation time: 30-40 mins.



Blackened Brussel Sprouts

Ingredients (use vegan versions):

Oil
10-20 Brussel Sprouts (Cut in half the long way)
1 Onion (Chopped)
Spike (or other salt substitute or add salt, pepper, and a few other spices)

Directions:

Serves 4.

Heat oil till its spitting hot. Add Brussel Sprouts, flat side down. Cook for a while stirring occasionally. When Brussel Sprouts begin to soften and blacken (10 minutes or so), add onions. Cook till onions are slightly blackened too.

in plus: 2 rosii mari cit mandarina, 2 ardei iuti din otzet, o mina de masline verzi fara simburui.


preparare:
Se pune garbanzo la inmuiat de cu seara. Se lasa acolo seara de seara ca tot n-ai timp sa-l fierbi. Macar ii schimbi apa si gatesti ce mai ai prin fridge; daca n-ai, si stafidele sunt bune.

Se cerceteaza din nou in ce stare e garbanzo - dupa vreo trei zile boabele au gustul de aluna. Atunci e momentul!

Se iau doua cani de boabe (eu zic sa incepeti cu una, ca daca nu va place ce iese, sa nu va para rau) de naut muiat si super muiat, se pun in blender cu rosiile, ardeii, maslinele si restul de ingrediente date de Michelle. Se blenduieste exact cum a zis ea, doar ca se pune mai putina apa intrucit mai iese ceva zeama de la rosii.

Iese o pasta de humus o minune - pentru amatorii de Raw food cuisine, e un adevarat deliciu!!

PS: Michelle, stiu ca se pot folosi si vinetele la reteta ta, dar ala se cheama Babaghanush, nu ma pacalesti tu pe mine asa usor !!

hai ca m-ati terminat. aseara anm cumparat un iepure si azi cautam idei noi de preparare. intru la bucatarie si vad subiectul cu iepurele pe varza. imi spun in gind, ciudat, dar interesant. cind colo, aici ploua cu retete de humus. pasta de susan tocmai am cumparat asa ca sint all set pt humus. intrebarea e, ce fac cu iepurele?

am facut azi o supa de dovleac beton. va dau si voua reteta. nematics fara tahini te rog !


700 grame de dovleac de iarna ( portocaliu) taiat cubulete
1 ceapa mica
1 rosie mica decojita si fara seminte
1/2 ardei iute cu seminte cu tot
3 catei mari de ustoroi
2 lg cu vf de smantana
sare si/sau vegeta
3 pahare apa sau supa de legume

se prajeste ceapa 5 minute , se adauga ardeiul , rosia , usturoiul ( taiate cubulete/ felii) . dupa 2 minute se adauga dovleacul+ 3 pahare de apa + sare. se fierbe acoperit 20 de minute la foc mic ( pana e moale dovleacul ).se baga in blender sau se foloseste blenderul vertical. se adauga smantana si se pune in farfuria in care in prealabil ati pus 2 linguri de mozzarela razuita pe razatoarea mare ( merge cu orice fel de branza tare)

cit am fost insarcinata am mincat numai carne de iepur (nu-i vorba ca numai dintr-aia mai gaseam la magazine ca era just before '89);

cel mai simplu era s-o fac supa, cu un morcov , o ceapa si o tzelina, o mincam cu usturoi in loc de piine!!!! Daca mincam altceva mi se facea rau.
Ori cum pe vremea aia nu aveam tahini, n-am stiut ca asta era drumul spre fericirea culinara!!!

PS: azi e joi - de luni si pina azi, cu cele patru retete de humus facuta pina acum si cu varza de bruxelles la care binenteles ca am adaugat un pic de spices (tahiniii), s-au dus trei sferturi din borcanul de un pound de tahini!! dupa ce-l termin tre' sa fac cura de slabire...
